Do you fancy an original dish? Try the Milanese Tripe, called "Busecca" too.
In Rome we traditionally prepare the Roman Tripe but maybe not everyone knows there is also a Milanese Tripe, the Busacca.
The Busecca recipe has been sent by Gloria from Venaria (TO) who writes: "I used to prepare this recipe with my father-in-law, he is Milanese, and I adapted it for Thermomix".

It is a traditional Lombardy recipe that was usually prepared by farmers for the Christmas Eve or for the cattle fairs. It seems Milanese people were very fond of it that they were called ironically "busecconi" ("who eats tripe"). :-))))
A very pretty idea is the Egg Tripe recipe (but there is not tripe in it). Other second dishes with meat are the Coffee Flavoured Pork Kebabs, the Curry Chicken, the Turkey Roll and the Meat Loaf Stuffed With Ham and Scamorza.
Ingredients
- 500 g Tripe
- 40 g Pancetta in cubes
- 1 Onion
- 1 Carrot
- 2 Celery sticks
- 30 g Extra-Virgin Olive Oil
- 450 g Tomato Sauce
- 1 Can Canned Butter Beans
- Salt
- Parmigiano Reggiano

Put onion, carrot and celery in the bowl. 1 Min. Speed 8.
Add pancetta cubes and oil. 3 Min. 100°C Speed Gentle Stirring.
Put tripe cut into stripes. 10 Min. 100°C Speed Gentle Stirring.
Add tomato sauce and salt. 20 Min. 100°C Speed Gentle Stirring.
Pour white beans. 15 MIn. 100°C Speed Gentle Stirring.
Serve and dust with grated parmigiano reggiano cheese.
