Coconut Biscuits with Thermomix

Then, all you have to do is eat these delicious sweets, as long as your guests, family or anyone who passes by the kitchen leaves you with some :-)

These coconut biscuits are made with egg whites: have you ever wondered what to do with the egg whites you have left in the preparation for other desserts? Here, now you have a good answer :-)

Thermomix coconut biscuits are also gluten-free biscuits, just check that the coconut flour is certified with the spikelet or that it is pure (sometimes they mix or write "traces of ...") and goooo !

Knowing how to prepare good gluten-free desserts is really important now. Both because in our families there is often someone who is celiac, and because varying the diet is always an advantage! Gluten-free desserts are not always good, because gluten helps a lot in preparation, especially with leavening. That's why these coconut, egg whites and sugar cookies are so special. Yummy and perfect. You can also not add the chocolate chips if you prefer a simple version.

Ingredients

(15 pieces)
- 200 g coconut flour
- 100 g sugar
- 3 egg whites at room temperature
- Chocolate chips to taste

Let's cook

Turn on the oven at 200C.

Put 200 g coconut flour in the mixing bowl and mix 10 Sec. Speed 10. Set aside.

Put 100 g sugar in the mixing bowl and mix 10 Sec. Speed 10.

Mount the butterfly whisk.

Add 3 non-cold refrigerator egg whites to the mixing bowl. Whip 6 Min. 37C Speed 4.

Leave the butterfly inserted and add the chopped coconut to the whipped egg whites and mix 20 Sec. Speed 4.

Arrange a sheet of backing paper on a baking sheet and, with a spoon, make lots of piles with the dough.

The piles must be well spaced from each other because they increase in volume during baking.

Sprinkle some chocolate chips on the piles of dough.

Reduce the oven temperature to 150C, insert the pan and cook 30/40 Min. 150C.

Tips

As an alternative to chocolate chips, you can melt 100 g of dark chocolate in the microwave and dip the biscuits in once they have cooled down after cooking ;-)
