Lemon Juice Cake with Thermomix



This lemon juice cake is perfect if you fancy a fresh and flavoured dessert. It would suit a luxurious breakfast or brunch, and would also be perfect to end a dinner party.
Piera (who suggested the recipe) describes it as "spectacular".

Piera has called this cake "Sicily flavour cake" because she uses her land's lemons, Sicilian lemons from Monreale (a town in the province of Palermo).

I made some changes to her original recipe using more butter and eggs and less milk, whipping the mixture a little bit more. This is because everyone always uses personal taste to prepare a dish.

I often do this kind of changes according to what I have at home :-) This experimenting, varying and modifying dishes make them always unique. It is important to use imagination when cooking!

So, if a thermomix recipe says 30 g and you add a little bit more of it, or if you use another liqueur instead of the one suggested in the recipe it is all good! Maybe the recipe will come out even better!

Ingredients


6 people serving

- 300 g Plain Flour
- 300 g Sugar
- 4 Eggs
- 170 g Butter
- Juice of 3 Lemons (about 150 g)
- 50 g Milk
- 15 g Baking Powder
- Icing Sugar, to decorate


How to prepare the Lemon Juice Cake


Separate egg whites from egg yolks.

Put the butterfly in the bowl and whip egg whites into stiff peaks with a pinch of salt. 2 Min. 37°C Speed 4. Put aside.

Put flour, sugar, butter at room temperature, yolks, lemon juice and milk. 30 Sec. Speed 4.

Add baking powder. 30 Sec. Speed 4.

Put the mixture in a 24 cm diameter baking pan and gently fold whipped egg whites into stiff peaks.

Bake for 1 h. at 160°C.

When cold, dust with icing sugar.

My advice


This lemon juice cake is simple, without any filling. But if you prefer custard inside it...when cold, cut the cake in a half horizontally and spread with thermomix custard!
