Thermomix Muffins Recipe

After my muffins, cupcakes, brownies recipes request on Facebook I've received more than one muffin recipes! This Muffins recipe is one of them!

When I received the first one by Pam Sihota, I gave it a quick read and I thought: "Oh my God, this is so simple!" Both the method and the ingredients list! I think they were the best muffins I've ever prepared :)

Thermomix helps a lot because it makes everything quicker. The result is a fluffy, moist and delicious treat you can flavour as you like!

The first recipe has been sent by Pam Sihota from Australia who converted it for Thermomix from a muffin recipe from while there is another muffin recipe that has been sent by Alba Elena Aiello, an Italian follower of this website's Italian version, who slightly changed the muffins recipe of the Italian Thermomix basic cookbook.

Recipe 1
by Pam Sihota, who adapted it from a muffins recipe


for 12 muffins

- 220 g Self-Raising Flour
- 90 g Vegetable Oil
- 130 g Buttermilk or Plain Milk
- 170 g Caster Sugar
- 1 Egg, lightly beaten
- 1 Tsp Vanilla Extract
- 150 g added Flavours, e.g. raspberry & white choc chip, banana, grated apple

How to prepare Thermomix Muffins

Preheat oven to 180°C.

Prepare muffin tins (lightly butter/oil or place muffin cases).

Placed all ingredients into TM bowl. Mix for 20 Sec. on Speed 4.

Add flavourings. Mix in Reverse. 20-30 Sec. Speed 1.

Place in tins and bake for 15-20 Min. or until lightly browned.

Pam's advice

I find it delicious for raspberry and white chocolate chip muffins!

Recipe 2
by Alba Elena Aiello, who slightly modified the official basic cookbook muffin recipe


- 150 g Milk
- 120 g Butter
- 60 g Caster Sugar (but she put more)
- 2 Eggs (eggs of about 60 g each)
- 300 g Flour
- 1 Tsp Baking Powder
- 1 Pinch Salt

How to prepare Thermomix Muffins

Heat milk in the bowl. 2 Min. 37°C Speed 1. I heat it for 30 additional seconds if milk has been in the fridge.

Add butter, eggs and sugar. Mix. 20 Sec. Speed 4.

Pour in flour, salt and baking powder. 15 Sec. Speed 5.

Place in tins or muffins cases.

Bake for 15-20 Min. at 180°C or until lightly browned.

Alba Elena's advice

If you want to flavour your muffins, you could add some jam, as the basic cookbook suggests, or you may add some dark chocolate chips as I do! They are so good! You have to place the batter inside your muffin case until it is half full. Add the filling of your choice, then cover with another little batter until the mould is 3/4 full. Be careful and do not fill in completely because they could overflow in cooking.
