Thermomix Broccoli Quiche Recipe



Quiche is one of the traditional Italian food. The Broccoli Quiche is a great recipe, typically prepared in winter, very rich in fibres and very tasty.

This appetising quiche is very easy to prepare and it's great either tepid or cold. You can serve it in many ways: as a single dish, as a starter or as a second dish served with a light salad or in accompany to a meat dish. Finally you could also cut this quiche into cubes and serve it during a buffet.

I've prepared it for a dinner at one of my friends' house. He does not like broccoli so much. But I insisted and my quiche flavour won over him. Finally he tasted it...and slowly relished it...and pretty shocked said: "Yummyyyyyyyyy!!" :-) What else could I ask?

I accompanied this dish with a Salice Salentino Rosato, a well-orchestrated wine, cherry-pink coloured, with a fine, dry and fresh taste.

The author of this recipe is Alberto Stefanutti from Cagliari who wrote: "I've prepared this recipe using broccoli stalks are they represent almost a half of their entire weight and I did not wanted to waste them". He's right, isnt' he????

Ingredients

- 1 dough Pie Crust (or your home-made Quick Puff Pastry with Thermomix)
- 400 g Broccoli Stalks
- 1/4 large Onion (or 1/2 a small onion)
- 75 g Shelled Walnuts
- 200 g sweet Pancetta, diced (or bacon if you prefer)
- Oil and Salt (black pepper too if you like) to taste
- 1 Egg
- 250 g Ricotta Cheese
- Herbs to taste (Thyme, Parsley or everything else)
- Bread-crumbs (if necessary)


How to prepare the Broccoli Quiche

Cut broccoli stalks into pieces and put it inside TM bowl. 5 Sec. Speed 5.

Add onion and walnuts. Grind 5 Sec. Speed 5.

Add pancetta. 5 Sec. Speed 5.

Add oil. 8 Min. 100°C Speed 1.

At the end of cooking, mix it all at Speed 4/5 until you have the perfect consistency according to your personal taste.

Add salt and black pepper (if you like).

Add other herbs. 10 Sec. Speed 5.

Add ricotta cheese and the egg. 10 Sec. Speed 5.

If it is too runny, add a little bit of bread-crumbs. 10 Sec. Speed 5.

Roll out pie crust inside a round baking pan and fill it with the broccoli mixture. Fold exceeding pie crust and bake in pre-heated oven for 30/35 Min. at 180°C/356°F.


Alberto's advice

"I invented myself cooking time and mixing time as broccoli stalks are very hard and need a really "intense" work. You can replace broccoli stalks with broccoli florets or you may use both of them. Cooking and mixing times must be fixed accordingly".
