This Thermomix leek and potato soup is absolutely delicious!

Personally I have a great passion for soups ... for any type of soup :-)

Personally I have a big love for soups, any kind of them. I have tried and posted some very delicate soups like the carrot soup, the Quichik pea and corn soup , the pumpkin and carrot soup,the Cream of Asparagus, Mushrooms and Thyme Soup, the Lentil Soup and the very good Asparagus Norwegian Soup.

Most of these recipes contain vegetables and this is definitely the best part! It feels so good and fit when you eat healthy! :-) And if you eat healthy and with taste, isn't it absolutely beautiful?

I know most of them involve vegetables only and I think this is the best thing about this kind of soups: you eat more greens and nourish yourself in a healthier way delighting your taste at the same time! Don't you think it is a fabulous thing?:-)

Thermomix leek and potato soup is a good winter dish.

The soups, in fact, are truly a turning point of winter. You arrive late from work and you have to come up with something to put on the table in no time. Here, with just a few healthy and cheap ingredients, such as vegetables, you can prepare dinner and feel satisfied! To taste, the soups can be enriched with croutons or crunchy bacon or with the seeds of your choice. I also recommend a drizzle of extra virgin olive oil and chilli.

- 40 g of extra virgin olive oil
- 500 g of leeks (2 large leeks)
- Salt to taste
- 200 g potatoes (2 medium potatoes)
- 300 g of water
- A tsp of Thermomix vegetable stock
- 100 g of fresh cream

Let's cook

Clean the leeks, discard the greenest part and cut them into rather thin slices. Also cut some green parts.

Pour 40 g of extra virgin olive oil into the mixing bowl, add 500 g of leeks, a pinch of salt and cook 5 Min. 100C Speed 1.

In the meantime, wash, peel and dice 200 g of potatoes.

Add the potatoes, 300 g of water, a tsp of Thermomix vegetable stock to the mixing bowl and cook 25 Min. 100C Speed 1.

Pour 100 g of cream into the mixing bowl and blend 1 Min. Spped 6.

Serve the leek and potato cream hot.


Also try the lighter version: replace the cream with 80 g of water or whole milk.

Anti-waste tip: do not throw away the green part of the leeks, use it thinly sliced for a very tasty omelette.

You can serve this cream with crunchy bacon or croutons.
