Thermomix Banana Bread

A soft, moist and tasty addition to your lunch-box or a welcome-home treat for both dad and the kids: who doesn't love Banana Bread?

Making Thermomix Banana Bread is quick and easy, and although it's not very common in Italy, once I tried it I couldn't live without it... it made it on my snack short-list in no time!

I thought there was only one banana bread recipe, instead there are many versions, in which the banana becomes more or less protagonist.

Among the many tests that I did, I liked the balance of ingredients that you find in this recipe.

The secret to making it really good? Use ripe bananas, those that are a little too soft to eat.

It's a breakfast dessert, the kind that makes you start off on the right foot ;-)


Ingredients


- 450 g peeled bananas
- lemon juice to taste
- 100 g soft butter
- 100 g sugar
- 2 eggs
- A pinch of salt
- 200 g plain flour
- 5 g baking powder
- A tip of a teaspoon of baking soda


Let's make our Banana Bread

Preheated oven at180C

Put 450 g banana pulp and a few drops of lemon juice into the mixing bowl and mix 5 Sec. Speed 5. Set aside.

Place the butterfly whisk, put 100 g soft butter, 100 g sugar and whip 2 Min. Speed 2-3.

Bring to the bottom with the spatula.

Add 2 eggs and a pinch of salt 1 Min. Speed 3.

Remove the butterfly whisk.

Add the bananas set aside 1 Min. Speed 2-3.

Add 200 g plain flour, 5 g baking powder, a tsp baking soda and whisk 1 Min. Speed 2-3.

Pour the mixture into plum cake mold and bake in a preheated oven 60 Min. 180C.


Tips

Instead of granulated sugar you can use brown sugar in the same quantity.

You can add chocolate chips, cinnamon, chopped walnuts or other dried fruit to the dough. Also delicious with dehydrated dried blueberries !!

You can switch 100g butter for 100g olive oil. Works beautifully. Thanks Susannah Larissa for the suggestion :-)!
