Thermomix Banana Bread

A soft, moist and tasty addition to your lunch-box or a welcome-home treat for both dad and the kids: who doesn't love Banana Bread?

Making Thermomix Banana Bread is quick and easy, and although it's not very common in Italy, once I tried it I couldn't live without it... it made it on my snack short-list in no time!

- 2 Bananas, ripe and chopped
- 120 gr Unsalted Butter
- 1 tbsp Vanilla Essence or Extract, or 1/2 Vanilla Bean, scraped
- 2 tbsp Milk or Yogurt
- 2 Eggs
- 200 gr Caster Sugar (you can do half brown half white if you like)
- 225 gr Plain Flour
- 2 tsp Baking Powder

Let's make our Banana Bread

Preheat oven to 180º C.

Place butter, sugar, bananas and vanilla into bowl and mix 7 Min. 40º Speed 3, until smooth and liquid.

Add yogurt/milk and eggs and mix 20 Sec. Speed 4.

Scrape down sides of bowl once in between mixing.

Add flour and baking powder and process for 15 Sec. Speed 3 until combined.

Pour into a lined loaf tin and bake for about 40 to 50 Min.

My Advice

If mixture isn't very liquid, add a bit of milk and process for one or two seconds more.
If you prefer, you can use SR Flour and leave out the Baking Powder
