Do you know hot cross buns? They are delicious Anglo-Saxon sandwiches, typical of the Easter period. It is one of my favorite Easter recipes !!
Originally they were prepared only for Good Friday, which is why they have a cross as a decoration. Today they are eaten for the entire Easter period, for breakfast or a snack, also stuffed with jam.
I find them already rich like this and I prefer to taste them without additions, maybe just baked, when they still give off a scent of spices and candied fruit that makes you hungry and happy :-)
How do you like them most?
Ingredients
(16 pieces)- Zest of an untreated orange
- 500 g manitoba flour
- 5 g dry yeast
- 75 g sugar
- Salt to taste
- 300 g whole milk
- 2 eggs
- ½ tsp ground cinnamon
- 70 g soft butter
- 50 g zest of candied orange and citron
- 75 g raisins
To finish
65 g 0 flour
50 g water
60 g peach jam
Let's cook
Put the orange zest in the mixing bowl and chop slightly 10 Sec. Speed 7. Set aside.Put 500 g manitoba flour, 5 g dry yeast, 75 g sugar, a pinch of salt, 300 g whole milk and knead 2 Min. Dough Mode.
Add an egg and knead 1 Min. Dough Mode.
Add ½ tsp ground cinnamon, chopped orange zest put aside, 70 g soft butter and knead 2 Min. Dough Mode.
Leave to rise for 2 hours in a bowl covered with a cloth.
Dice 50 g zest of candied orange and citron.
Put the dough, 50 g zest of candied orange and citron into the mixing bowl and mix 1 Min. Dough Mode.
Transfer to a surface and shape 16 round buns.
Put them on a plate with baking paper.
Lightly beat an egg in a small bowl and brush the buns.
Wash the mixing bowl with quick self-cleaning.
Prepare the batter for the cross.
Put 65 g 0 flour and 50 g water in the mixing bowl and mix 30 Sec. Speed 4.
Put the batter in a sac à poche with a small round hole and create the cross on the buns.
Leave to rise for 40 Min. in a dry, closed place.
In the meantime, preheat the oven to 180C.
Bake the buns 30 Min. 180C.
Wash the mixing bowl with quick self-cleaning.
Put 3 spoons of peach jam in the mixing bowl and melt 1 Min 100C Speed 1.
Brush on freshly baked buns to polish them.
Tips
If you don't like manitoba flour, you can use the same amount of 0 flour.When you remove the orange zest from the orange, avoid the white part, which is bitter.
To work the sandwiches well, flour the hands.
If you wish, add a sprinkling of nutmeg and ginger to the dough.
