Apple Cake Thermomix

The scent of an apple cake is always something special! It floods the house and takes me back to when I was little and my mom used to make us a cake for a snack.

There are many, many versions to prepare apple pie, and on my website you can find plenty of them. This is the classic recipe, the one with a soft fluffy dough, apples on the surface and cinnamon.

Another apple pie recipe that I really love is apple cinnamon pie.


Ingredients

(8 people)
- 2-3 apples (about 400 g)
- 1 lemon (juice)
- a tsp cinnamon (optional)
- 125 g unsalted butter (at room temperature)
- 125 g white sugar
- 4 medium eggs (at room temperature)
- 100 g fresh whole milk
- 250 g plain flour
- A pinch of salt
- 16 g baking powder for cakes
- Vanilla sugar to taste

Let's cook

Take 2 apples (about 400 g) of the quality you prefer, core, peel and cut into slices.

Place the slices in the squeezed juice of a lemon and add a tsp of ground cinnamon.

Meanwhile, prepare the cake dough.

Enter the butterfly whisk.

Put 125 g unsalted butter (at room temperature) and 125 g white sugar in the mixing bowl and whisk 5 Min. Speed 4. until the mixture is light and fluffy.

Add with the blades in motion at Speed 4, 4 medium eggs (at room temperature) and whip 1 Min. Speed 4.

Add 100 g of fresh whole milk, 250 g plain flour, a pinch of salt and continue to whisk 1 Min. Speed 4.

Add 16 g of baking powder and mix 30 Sec. Speed 4.

Pour the mixture into a 28 cm baking pan lined with backing paper.

Arrange the slices of apple radially on the dough, without sinking them.

Bake in a static oven 30-40 Min. 180C.

Once cooled, sprinkle with vanilla sugar.


Tips


Use a rectangular pan and then cut the cake into squares, perfect for a sweet snack with friends or a buffet dinner!

If you prefer, use brown sugar.

Cinnamon is an optional spice :-).

Instead of lemon and cinnamon juice, you can sprinkle the apples with a little rum or maraschino.
