Thermomix Pumpkin Fritters

Sweet pumpkin fritters with Thermomix are a specialty with pumpkin that really drives me crazy. Sweet and crunchy on the outside, very soft on the inside ... oh my goodness!

I prepared them one afternoon, but the family looked at me wrong knowing that there was pumpkin. It seemed my usual way of hiding vegetables in the dough… but they all changed their minds, even my husband who was the most skeptical of all! And these sweet pumpkin fritters went away in a heartbeat ...

In fact, by now you know, I like to combine the useful with the ... good! Pumpkin is one of the orange vegetables: it has antioxidant and anti-inflammatory properties.

It has a sweet and delicate flavor that, at least my children, don't always like in savory dishes. But because of its particular taste it lends itself very well to the preparation of desserts of all kinds :-)

Ingredients

(40 pieces)
- 500 g pumpkin
- 100 g granulated sugar + 2 tbsp to activate the yeast + as needed to sprinkle
- One untreated lemon (zest)
- One egg and one yolk
- 400 g plain flour
- 60 gr potato starch
- 16 g dehydrated brewer's yeast
- Extra virgin olive oil or seeds for frying


Let's cook


With a potato peeler remove the skin from the pumpkin and remove all the seeds. Cut the squash into pieces. You need to get 500 g of pumpkin. Put it in the simmering basket.

Pour 500 g water into the mixing bowl. Place the simmering basket and cook for 25 Min. Varoma Temp. Speed 1. Take out the basket by hooking it with the spatula and let the pumpkin cool.

In the meantime, throw the cooking water out and dry the mixing bowl with a towel.

Put the zest of a lemon and 100 g granulated sugar in the mixing bowl and chop 10 Sec. Speed 10.

Add the cooled pumpkin and blend 10 Sec. Speed 7.

Add a whole egg and a yolk, a pinch of salt, 400 g plain flour, 60 g potato starch and mix 30 Sec. Speed 4.

Add 16 g dehydrated brewer's yeast and 2 tsp of sugar to activate it. Mix 2 Min. Speed 4.

Place in a bowl covered with a bath cap and let rise in a warm, dry place, until doubled in volume. About 2 hours.

Once the volume has doubled, heat a pan with plenty extra virgin olive oil (you can also use seed oil). With the help of 2 spoons, take the dough and fry the pancakes until they are golden brown.

Then still hot, pass them in granulated sugar.

Tips


You can flavor the dough with cinnamon.

You can add, in addition to the lemon zest, also the orange zest.

As an alternative to dry yeast, you can use 25 of fresh brewer's yeast to dissolve with a little water and sugar.

As an alternative to granulated sugar, you can sprinkle them with vanilla sugar or cinnamon.
