Roscón de Reyes Thermomix

For Epiphany, try this Spanish yeast dough cake: the donut of the Magi, better known as Roscon de Reyes.

Christmas is Christmas in Spain too! In this European nation, the tradition of the Magi is very strong, so much so that Christmas gifts arrive on time on January 6th :-)

I have several Spanish friends who live in Italy, some for work, others for matters of the heart. Nobody, that I know of, has abandoned the tradition of the Magi and in early January everyone begins preparations for the feast, even in the kitchen.

I prepare it too: I find it an excellent opportunity to remind my children of the true origin of the feast of the Epiphany ;-)

Ingredients

(8 people)
For the donut
- An untreated orange (zest)
- One untreated lemon (zest)
- 150 g sugar
- 2 eggs
- 600 g plain flour
- 5 g orange flower water
- 230 g milk
- 10 g fresh brewer's yeast
- 120 g unsalted butter
- A pinch of salt

To decorate
- An egg
- 200 g mixed candied fruit
- 50 g granulated sugar

Let's cook


Use a potato peeler to remove the zest of one untreated orange and one lemon. Put them in the mixing bowl and chop 10 Sec. Speed 7. Set aside.

Place the butterfly whisk, add 150 g sugar, 2 eggs and whip 3 Min. Speed 3. Remove the butterfly whisk.

Add 600 g plain flour, 5 g orange flower water, 230 g milk, 10 g fresh brewer's yeast and knead 1 Min. Speed 4.

Add the reserved peel, 120 g unsaled butter, a pinch of salt and knead 4 Min. Dough Mode.

Put the dough to rise in a floured bowl covered with a cotton cloth or plastic wrap for 4 hours.

Shape the dough into a ball, place it on a baking sheet lined with backing paper and with your fingertips make a hole in the center of the ball.

Widen the hole until the dough takes the shape of a donut about 35 cm in diameter.

Let it rise 1 hour in a sheltered place.

Brush the donut with a beaten egg and decorate it with 200 g mixed candied fruit and 50 g granulated sugar.

Bake in the oven (ventilated) 5 Min. st 200C and 20 Min. st 180C.

Remove from the oven and enjoy warm or cold.


Tips


Once cold, you can also open the donut and fill it with jam, cream, Nutella or whipped cream !!

If you are using small candied fruit, add it halfway through cooking to avoid burning it!
