Thermomix Tiramisu Cheesecake

Who doesn't love tiramisu? Here it is in a delicious version: the tiramisu cheesecake!

A soft and delicious cream rests on the base of ladyfingers soaked in coffee, to be enjoyed spoon after spoon.

Cheesecake is a very practical dessert. Cooking time is what it is, and you don't always have half a day to prepare something good. I have learned to play in advance ;-).

Tiramisu cheesecake is perfect for these situations: you can freeze it and then take it out a few hours before serving, just sprinkle it with cocoa just before bringing it to the table!



Ingredients

(for 8 people)
For the base
- 80 g unsalted butter
- 20 g espresso
- 40 g sugar
- 200 g ladyfingers biscuits

For the cream
- 10 g gelatin in sheets
- 40 g water
- 100 g sugar
- 5 yolks
- 50 g fresh cream
- 500 g mascarpone
- 250 g cream cheese

To decorate
- Bitter cocoa to taste


Let's cook


Soak 10 g gelatin in very cold water.

Put 80 g unsalted butter into the mixing bowl and melt 2 Min. 50C Speed 1.

Pour 20 g espresso and mix 5 Sec. Speed 4.

Combine 40 g sugar, 200 g ladyfingers and mince 10 Sec. Speed 7. Collect at the bottom and repeat.

Remove from the mixing bowl and place the dough on the bottom of a 22 cm diameter hinged pan. Press with a spoon to get a compact layer and put in the refrigerator.

Pour 40 g water, 100 g sugar in the clean mixing bowl and heat 2 Min. 80C Speed 1.

Add 5 egg yolks and heat 1 Min. 80C Speed 1. Place the butterfly whisk and mount 3 Min. Speed 4.

In a saucepan, heat 50 g fresh cream and add the soaked gelatine, pour everything into the mixing bowl and continue to whisk 1 Min. Speed 4.

Remove the butterfly whisk from the mixing bowl. Add 500 g mascarpone, 250 g cream cheese and amalgam 40 Sec. Speed 4.

Pour the cream on the bottom of the biscuits, level well and leave to thicken in the refrigerator for 2 hours.

Sprinkle with bitter cocoa and serve the cheesecake.

Tips


For a richer filling, pour half of the cream and let it thicken in the refrigerator for at least 30 Min. Put about 10 ladyfingers in sweetened coffee diluted with water, divide them in half and arrange them radially on the cake. Cover with the remaining cream.

You can also make the dessert the day before. The important thing is that you sprinkle it with cocoa just before serving it.

Greedy touch? Add some dark chocolate chips to the cream. :-D
