Thermomix Avocado Ice Cream
Making Avocado Ice Cream takes just a few minutes with your Thermomix, and it's definitely something you will be proud to take out of the freezer at dessert time.

This recipe makes about 1 litre and uses coconut milk, making it suitable and healthier for all of us - although you can substitute regular milk, thick yogurt, greek yogurt or even your own Coconut Yogurt.

What I love to serve in hot summer nights, is a selection of homemade ice cream flavours and fresh fruit, all arranged in a big, cheerful platter full of colours.

Ingredients

- 2 avocados
- 250 g coconut milk, frozen in small cubes
- 60 g brown sugar
- 60 g honey
- 250 g coconut cream
- 20 g lemon juice



Let's make our Avocado Ice Cream

Pell 2 avocados and remove the avocados kernel. Cut into cubes and set aside.

Before starting, have your 250 g coconut Milk frozen in small cubes. You can use an ice tray.

Put 60 g brown sugar into the mixing bowl and mix 10 Sec. Speed 10.

Add the avocados cut into cubes, 250 g coconut milk frozen in small cubes, 60 g honey, 250 g coconut cream and 20 g lemon juice, put the measuring cup on the lid and blend 1 Min. Speed 9 until smooth.

Serve and enjoy!



My Advice

If you don't serve it straight away, place it in the freezer but remember to move it to the fridge 15 Min. before serving.
