Chocolate Chip Brioche Rolls Thermomix

Do you know the Chocolate Chip Brioche Rolls Thermomix? In Italy we call them Pangoccioli.

In Italy they are very popular leavened products! There are packaged snacks but there is also a good recipe to make them at home in a healthy way with the flours we choose!

These are round and soft buns that have delicious chips of chocolate in the dough. Good, fluffy, sweet and greedy, mine have gone like hot cakes!

Once we took the pangoccioli to the park and a little girl, attracted by these round and fragrant sweet rolls, with those chocolate chips that pop up here and there, wanted to taste them.

I always carry a few more ... but from that day, in order not to hurt anyone, I have to bring at least 20: even mothers eat them!

Ingredients

(for 26 pieces)
- 25 g fresh brewer's yeast
- 120 g whole milk + a spoon for brushing
- A tsp honey
- 4 medium eggs + one egg for brushing
- 650 g very strong white flour (you have to use a flour that is very rich in gluten)
- 8 g salt (about a heaped tsp)
- 60 g sugar
- 200 g soft butter at room temperature
- 50 g dark chocolate chips

Let's cook


Put in the mixing bowl 25 g fresh brewer's yeast, 120 g milk, a tsp honey and mix 1 Min. 37C Speed 2.

Add 4 medium eggs and mix 30 Sec. Speed 2.

Combine 650 g very strong white flour (you have to use a flour that is very rich in gluten), 8 g salt, 60 g sugar and knead 30 Sec. Dough Mode.

Let the dough rest in the mixing bowl for 10 Min.

In the meantime, cut 200 g soft butter into chunks and set aside.

Work again 30 Sec. Dough Mode.

Let the dough rest in the mixing bowl for 10 Min.

Gradually add the butter kept aside from the hole in the lid, waiting for it to be absorbed by the dough before adding more. 30 Min. Dough Mode.

Let the dough rest for 10 Min. in the mixing bowl.

Add 50 g of dark chocolate chips and knead 30 Sec. Dough Mode.

Transfer the dough to the floured work surface, form a ball and put it in a bowl. Let it rise until doubled in volume, about 1 hour.

Transfer the dough back to the work surface, divide it into equal pieces and shape into balls to make buns.

Arrange the balls on a baking sheet lined with parchment paper and leave to rise for another 30 Min.

Turn on the oven at 200C.

Brush the surface of the brioche rolls with a beaten egg along with a tbsp milk.

Bake for 12-15 Min. At 200C.

Tips

Do you want some really fluffy Chocolate Chip Brioche Rolls ? Let the dough rise in the off oven with a saucepan of boiling water next to it.

The pieces of dough for making buns must all have the same weight, so that they also have the same cooking time.

Special trick: If you are afraid that the drops will melt, put them in the freezer before adding them to the dough.

If you prefer sweeter buns, increase the sugar dose up to 100g.
