Zucchini Soup Thermomix Recipe

How good are the vegetable soups! You can make them with your favorite vegetables. Like this Zucchini Soup Thermomix!!

Who doesn't love zucchini? They are probably among the vegetables that find a little consensus from everyone. Thanks to the delicate taste and tender pulp, they are suitable for many preparations!

To make the cream richer, I propose a quenelle of cheese in combination, but if you want, even simple cubes of toast are enough :-)

Ingredients


(for 4 people)
For the zucchini soup - One shallot
- 40 g of extra virgin olive oil + to taste
- 800 g zucchini (cleaned)
- 250 g potatoes (peeled)
- 400 g of water
- A tsp of Thermomix vegetable stock

For the goat cheese quenelle with basil - A bunch of basil leaves
- 160 g of goat cheese
- 40 g of whole milk

Let's cook


Wash and dry the leaves of a bunch of basil with the salad dryer. Put them in the mixing bowl and chop 5 Sec. Speed 7.

Place the butterfly whisk, add 160 g of goat cheese, 40 g of milk and mix 20 Sec. Speed 3. Keep aside.

Wash the mixing bowl with self-cleaning and remove the butterfly whisk.

Wash the zucchini, trim them and weigh 800 g. Keep aside.

Peel the potatoes, weigh 250 g and set aside.

Put a peeled shallot in the mixing bowl and chop 5 Sec. Speed 6. Collect at the bottom and repeat.

Pour 40 g of extra virgin olive oil and cook 4 Min. 100C Soft Speed.

Meanwhile, cut the zucchini into thick slices and the potatoes into pieces.

Put the zucchini and potatoes in the mixing bowl, pour 400 g of water, add a tsp of Thermomix vegetable stock and cook 25 Min. 100C Soft Speed.

Add the salt, put the measuring cup and blend 30 Sec. Speed 10, gradually increasing.

Serve on plates and decorate each plate with a quenelle of the reserved goat mixture. Then season with a drizzle of raw oil.

Tips

To make the quenelles, you only need two spoons: take the mixture with one, and work it with the other to eliminate the excess and let it fall into the plate.

Instead of basil, a nice handful of mint leaves is also good!
