Thermomix tomato soup is a very quick and practical dish to prepare in summer, especially when you only have a few tomatoes.
Add herbs to taste. I chose basil and marjoram, but you can use whatever you prefer.
You can balance the smooth, sweet flavor of the tomatoes with the tangy taste of Greek yogurt or sour cream.

Ingredients
(for 4 people)- 30 g extra virgin olive oil
- 1 clove of garlic
- 1000 g ripe tomatoes (same variety or mixed—plum, cherry, piccadilly, etc.)
- A few basil leaves
- 1 sprig of marjoram
- 100 g water
- 1 tablespoon vegetable stock paste or salt Chili pepper (optional)
- Greek yogurt for about 4 quenelles (approx. 160 g)
- 4 eggs
Let's cook
- Place 30 g of extra virgin olive oil and 1 clove of garlic in the mixing bowl and sauté for 3 min / 120°C / speed 1.
- Add 1000 g of chopped ripe tomatoes and cook for 5 min / 120°C / speed 2.
- Add 60 g of water and 1 tablespoon of vegetable stock, then cook for 15 min / 100°C / speed 2.
- Check the consistency, which depends on how much liquid the tomatoes release.
- If needed, thicken for 10 min / Varoma / speed 1 (adjust time based on liquid amount).
- Add a few basil leaves, one sprig of marjoram, and a pinch or small piece of chili pepper.
- Blend for 30 sec / speed 8.
- Serve with a quenelle of Greek yogurt.
Tips
You can substitute the Greek yogurt quenelle with sour cream. To form a quenelle, use two damp spoons to shape the yogurt into an oval.Translated from the Italian recipe
