I tasted a pumpkin flan for the first time when my mother-in-law's prepared it. I think I hadn't ever tasted pumpkin before that day, about 7 years ago. I missed a lot over these years...!
Obviously I immediately cooked this flan with Thermomix. I must admit I needed a little bit of time to get a similar consistency and taste to my mother-in-law one and she does everything without Thermomix. Well at the end I made it and I'm very proud of it!
For example I spend half of the time my mother-in-law does because she has to stir the béchamel sauce continuously and check its consistency.
This flan made me fall in love with Pumpkin!

- 1 Small Onion
- 550 g Pumpkin
- 30 g Olive Oil
- 250 g Milk
- 30 g Butter
- 100 g Flour
- 1 Egg
- 60 g Parmigiano Reggiano Cheese
- Salt to taste
- Black Pepper to taste
How to prepare the Pumpkin Flan
Put onion in the Thermomix bowl. 3 Sec. Speed 7.
Add olive oil and pumpkin peeled and cut into pieces. 30 min. 100°C Speed 1.
Then to eliminate the water released by pumpkin inside the bowl cook 10-15 MIn. Temp. Varoma Speed 1.
Mix and put aside.
Prepare béchamel sauce. You mustn't wash the bowl, you just need to remove pumpkin pieces all around.
Add milk, flour, butter and salt in the bowl. 6 Min. 90°C Speed 4.
Add pumpkin, egg and parmigiano reggiano. Blend 20 Sec. Speed 5.
Pour this mixture in a baking pan and bake. 20 Min. 220°C. It must be crunchy on the surface.
This Pumpkin flan can be served as a side dish or as a starter. You may serve it with a Gorgonzola Cheese Sauce.
