Pumpkin Flan with Thermomix


Are you looking for a pumpkin recipe that is nutritious and light? This Thermomix pumpkin flan is for you! Inside, in addition to the pumpkin, there are also egg, parmesan, milk and flour.

I tasted it for the first time several years ago from my mother-in-law. Until then, never having tasted pumpkin. What have I been missing all these years ...

Obviously, I immediately cooked this flan with the Thermomix. I must admit that it took some time to get to the exact flavor and texture of my mother-in-law, who does everything by hand. But, in the end, I did it and I'm very proud of it!

Also because to make this flan I take half the time compared to my mother-in-law who, for example, has to turn the béchamel by hand and has to check that the density is right.;-)

With this Thermomix pumpkin flan I fell in love with pumpkin!

Ingredients


(for 6 people)
- A small onion
- 30 g extra virgin olive oil
- 550 g pumpkin
- 250 g milk
- 100 g plain flour
- 30 g unsalted butter
- An egg
- 60 g Parmesan cheese
- Salt to taste


Let's cook!


Place small 1 onion, peeled and cut into pieces in the mixing bowl and chop 3 Sec. Speed 7.

Add 30 g extra virgin olive oil and 550 g pumpkin, peeled and cut into pieces. Cook 30 Min. 100C Speed 1.

Let it thicken 10-15 Min. Varoma Temp. Speed 1.

Blend everything Some Sec. Speed 5 and set aside

Make the béchamel. No need to wash the mixing bowl, just remove the bulk of the pumpkin!

Put 250 g milk, 100 g plain flour, 30 g butter and a pinch of salt in the mixing bowl and cook 6 Min. 90C Speed 4.

Add the pumpkin, 1 egg, 60 g Parmesan cheese and blend and mix 20 Sec. Speed 5.

Pour the mixture into a greased and floured baking pan and bake for 20 Min. 220C.

A crust should form on the surface.

Tips

This pumpkin pie can be served as a side dish but also as an appetizer.

Gourmet version? Serve it with a gorgonzola sauce. :-)
