What a good breakfast when there are Thermomix pumpkin pancakes! A classic of overseas breakfast enriched with the pulp of the pumpkin, delicate and sweet, which makes these pancakes delicious.

Vegetables and co are very important in the diet of children and the whole family. Since they are not always very successful, the best thing is to include them as an ingredient in the preparations they love most.

It is a "trick" that I have always followed and that has allowed me to gradually get used to even the most reluctant to all flavors.

Pumpkin pancakes with Thermomix are perfect, also because steaming maintains flavor and guarantees a good consistency of the pulp.

In the recipe I dosed the spices as we like it (yes, even the children!), But you can vary the quantity and type of spices as you like. Personally, I never give up ginger, which goes very well with pumpkin! But cinnamon and cloves are also not bad, because they light up the dough with flavor !!

On the quality of the pumpkin, you do. Surely a pumpkin muscat from Provence or a Neapolitan pumpkin are ideal, but a butternut or the less sweet pumpkin of Hokkaido is also fine, which however has a nice firm pulp and a very thin skin that does not give problems even for these preparations (but are tastes).

Ingredients

(4 people)
- 500 g water
- 250 g pumpkin
- 25 g unsalted butter
- 250 g milk - One egg
- 50 g sugar
- 220 g plain flour
- 8 g baking powder
- ½ tsp cinnamon (for a stronger "spicy" pumpkin flavor, use 1 tsp or substitutewith 1 tsp of pumpkin spice blend)
- ¼ tsp freshly grated nutmeg
- ½ tsp ground ginger
- A pinch ground cloves
- ¼ teaspoon salt

To serve
- Pure maple syrup (or Nutella)


Let's cook


Pour 500 g water into the mixing bowl.

Place 250 g chopped pumpkin in the basket and place it in the mixing bowl. Cook 25 Min. Varoma Temp. Speed 1.

Throw away the cooking water and set the pumpkin aside.

Put 25 g unsalted butter in mixing bowl and melt 1 Min. 70C Speed 1. Possibly, if the butter is not completely melted, increase the time.

Add the pumpkin set aside, put the measuring cup and blend 5 Sec. Speed 7.

Add 250 g milk, one egg, 50 g sugar, 220 g plain flour, ½ tsp of cinnamon, ¼ tsp nutmeg preferably freshly grated, ½ tsp ground ginger, a pinch of ground cloves, ¼ tsp of salt and 8 g baking powder and blend 5 Sec. Speed 5.

Heat a smooth griddle or non-stick pan. If necessary, butter it.

Pour a little of the dough with a ladle, forming discs of about 8-10 cm.

Bake the pancakes 1 min. on each side, turning when the dough begins to thicken along the edges and to bubble.

Tips

Don't you really like the idea of spices? You can add chopped chocolate or a spoonful of unsweetened cocoa powder, or ... nothing!
