Do you always look for recipes to make your children eat zucchini? I prepare this Zucchini Flan! You can also call it zucchini cake, as you prefer. I just know that it is delicious, quick to prepare and my daughters like it so much (and we adults like it too!).
The procedure is very similar to the Pumpkin Flan one but with some differences due to the zucchini itself. The important thing is that in this cake there is all: zucchini, eggs, parmesan cheese, milk and flour! A complete meal actually!
It's good for children but not only for them. You can put the mixture in single portion mould and serve it to your guests as a tempting small flan.
Thanks to béchamel sauce and abundant parmesan cheese this cake allows people who don't like zucchini very much to eat them, almost without noticing it! And it's the same if you want to try the Fresh Egg Pasta Roll with Zucchini. It's one of those recipes that make you eat (and make others eat!) what's "green" in a hiding way.

(4 People Serving)
- 1 Fresh Onion
- 50 g Olive Oil
- 250 g Zucchini
- 150 g Milk
- 20 g Butter
- 50 g Flour
- 1 Egg
- 30 g Parmigiano Reggiano Cheese
- Salt to taste
- Black Pepper to taste
How to prepare the Zucchini Flan
Put onion in the bowl. 3 Sec. Speed 7.
Add oil. 3 Min. 100°C Speed 1.
Add zucchini cut into pieces. 30 Min. 100°C Speed 1.
Blend. 5 Sec. Speed 6.
Add milk, flour, butter, salt and pepper to taste. 6 Min. 90°C Speed 4.
Add egg, parmesan cheese. Blend. 20 Sec. Speed 5.
Pour this mixture in a 24cm diameter baking pan and bake 20 Min. 220°C. There must be a crunchy surface.
