Artichokes Risotto with Thermomix



Do you still fancy risottos even if spring is yet to come? So you must try this artichokes risotto, a very strong and flavoured taste.

But which one is artichokes season? There are two varieties: a late autumn/winter one and a late spring/summer one. In this period you can easily find them in a market and cook them with your favourite rice, to create this recipe.

Artichokes are probably the ugliest flowers I've ever seen but they are absolutely the tastiest ones. I usually wait for winter to come so that I can buy them and cook them in many different ways!

It's good to find them in a market in spring too, because they're cheaper and you can buy more of them!

Obviously I can prepare a very good risotto without stirring continuously and adding not so good ingredients. In fact with Thermomix I can prepare by myself a good Vegetable Stock Cube and a Make-ahead Mirepoix, both very useful when preparing risottos as flavourings.

This recipe has been sent by Luana Giannone from Brindisi who adapted a recipe of her for Thermomix.

Ingredients


- 5 or 6 Artichokes
- 1/2 Lemon
- 1 Garlic Clove
- 1/2 Onion
- 1 Pinch Black Pepper
- 500 g Rice
- 40 g Extra-Virgin Olive Oil
- 1/2 Measuring Cup White Wine
- 500 g Water
- 1 Tsp Vegetable Stock Cube or Make-ahead Mirepoix


How to prepare the Artichokes Risotto


Clean artichokes and let soak them in acidulated water (with lemon in it).

Put oil, garlic and onion in the bowl. 3 Min. 100°C Speed 2. Reverse.

Add drained artichokes and black pepper. 10 Min. 100°C Speed 2. Reverse.

Add rice and white wine. 3 Min. 100°C Speed 1.

Add hot water and the stock cube. 20 Min. 100°C Speed Gentle Stirring. Reverse.

Change onion and garlic quantities according to your taste.


My advice
