Thermomix Blueberry Muffins Recipe



This Thermomix Blueberry Muffins recipe has been found by Ellen Lagendijk, a fan on the Facebook page of this website. She has read it on the official UK Thermomix website.

I must thank her so much! I can finally add a real and original muffin recipe to my archive!

On the official UK Thermomix website they are described as: "Excellent! Perfect muffins (Canadian style!) that can be made in the Thermomix! Eat them while still warm if you can".

Let me remind you these are very different from the classic English Muffin Bread...actually they are Canadian style muffins!

Very soft, sweet and enriched by simple blueberries, cranberries or chocolate chips these muffins are the perfect breakfast or afternoon snack together with a glass of milk for the youngest and a nice cup of tea for adults.

Moreover they are in single portions and this is great! They are very simple to prepare and very easy to have. You may also freeze part of the muffins if you prepare too many of them. Very good to bring to a mountain picnic, very handy because you just need a napkin and a good sweet tooth :-D

This is my first muffins recipe ever! I hope I can add more recipes like this thanks to your recipes too :-)

Ingredients


12 muffins

- 120 g Fresh or Frozen Blueberries
- 1 Tbsp Organic Plain Flour
- 220 g Organic Plain Flour
- 3 tsp Baking Powder
- ½ tsp Salt
- 50 g Butter or Sunflower Oil
- 110 g Sugar
- 1 Egg
- 170 g Milk
- 1 tsp Vanilla Essence or Vanilla Bean Paste


How to prepare the Thermomix Blueberry Muffins


Place a large bowl on the Thermomix lid. Weigh into it the blueberries and add the 1 Tbsp flour. Stir gently to coat the berries with the flour. Set aside.

Weigh the 220 g flour, butter or oil, and sugar into the Thermomix bowl. Add the baking powder and salt then Turbo pulse until crumbs form.

Add egg, milk and vanilla. Knead 3 or 4 times only on the Dough Setting until JUST mixed. Batter will still be lumpy.

Fold the batter into the floured berries by hand until JUST mixed and divide gently into a buttered 12 muffin cup pan.

Bake 20 to 25 minutes at 200°C/400°F/gas 6.

Aga Ovens: Bake in the Aga Roasting Oven on the rack on the lowest set of runners, 15 to 20 minutes.

Cool in the pan 5 minutes before taking out to cool completely on a rack.
