Red Potatoes and Aubergines Croquettes with Thermomix

Good cooking with Thermomix potato and Aubergines croquettes!

- 500 g of water
- 400 g of eggplant
- 500 g of red potatoes
- A few leaves of parsley
- 40 g of Parmigiano Reggiano
- Salt to taste
- 1 egg
- 100 g of smoked cheese (or a hard cheese you like)
- Breadcrumbs to taste

For frying

- Extra virgin olive oil as needed

Let's cook

Pour 500 g of water into the mixing bowl.

Put 500 g of red potatoes and 400 g of aubergines cut into pieces in the Varoma bell. Cook 30 Min. Varoma Temp..

Let it cool well.

Discard the cooking water and dry the mixing bowl with a dish towel.

Put a sprig of parsley and 40 g of Parmigiano Reggiano in the dry mixing bowl. Mince 10 Sec. Speed 7.

Add the cooled aubergines and potatoes and chop 20 Sec. Speed 6.

Add salt to taste and an egg and mix 20 Sec. Speed 5.

Check that it is a well-blended mixture.

Shape the dough into balls.

Put a piece of smoked cheese or hard cheese you like inside each and pass in the breadcrumbs.

Fry in abundant extra virgin olive oil.

When they are golden, remove them from the oil, drain them on absorbent paper and serve.


You can replace parsley with basil.
