Biscotti Regina Queen's Biscuits with Thermomix are truly fantastic Sicilian biscuits! They are also known as Reginelle cookies.
When I go to Sicily I always have a feast of these simple cookies, perfect for dipping in milk, yet so tasty.
It will be for the saffron that is in the dough, it will be for the sesame that covers them, they have a truly unique flavor that makes them famous all over the world.
In Catania they have icing.
To prepare this recipe I experimented with several and, in the end, I found the one I liked best! I was inspired by Rosanna's recipe from Una Siciliana in cucina, which I really appreciate both for her recipes and for her photos! I made some small changes and adaptations to the Thermomix and I must say that the result is excellent! Thanks Rosanna!
I often use sesame to cover my baked goods, because I really like its flavor, because it is good for you but also because it gives a good look to the dish. You can also find it in my Burger buns.
Good cooking with Biscotti Regina - Queen's Biscuits.
Ingredients
250 g of plain flour80 g of sugar
80 of butter or lard
8 g of baking powder
1 egg
1/2 sachet of saffron
20 g of whole milk
a pinch of salt
Sesame seeds to taste
Let's cook!
Put 250 g of plain flour, 80 g of sugar, 80 g of butter or lard, 8 g of baking powder in the mixing bowl and knead 10 Sec. Speed 4.
Add an egg, 1/2 sachet of saffron, 20 g of milk and a pinch of salt. Knead 2 Min. Dough Mode.
The dough must be compact and soft.
Obtain many snakes from the dough, about 2 cm wide.
Cut them into sticks so that they are about 5-6 cm long.
Dip the sticks in the sesame.
Put them on a baking tray lined with parchment paper and cook for 5 Min. 200C and then 15 Min. 170C.
They must take on a nice golden color.
