What a treat are the Sweet Tortelli with Thermomix Custard!
They are traditional pastries of Emilia Romagna. They can have jam, chestnut or custard filling. In this recipe which has been sent by the very good Stefania they are filled with Thermomix Custard :-)
Preparing these pastries with Thermomix is very funny because the main work (kneading) is done by our electronic friend :-) Someone prefers cooking them in the oven, to have a lighter dessert. But I must be sincere....if fried they are more delicious :-)
Along the regional recipes of Emilia Romagna to prepare with Thermomix there is the Gnocco Fritto and the classical Piadina Flat Bread.
Other traditional recipes you may like are the Canestrelli Italian Biscuits, the Honey Biscuits, the delicious Treccine Brioches and the Zeppole (or St. Joseph's Puffs).
Ingredients
- 60 g Sugar
- 1 Lemon Peel
- 60 g Butter
- 1 Egg-Yolk
- 90 g Milk
- 300 g White Flour
- 8 g Baking Powder
- 2 pinches Salt
- 1 Egg to spread on the surface
- 1/2 L Thermomix Custard
How to prepare the Sweet Tortelli
Prepare the custard. Put aside.
Put sugar and lemon peel in the bowl. 10 Sec. Speed 10.
Add the yolk, the butter and the milk. 30 Sec. Speed 6.
Put flour and baking powder in the bowl. 15 Sec. Speed 6 then 1 Min. Speed Dough Mode.
When you have a chewy and thick dough, roll it out to 2 mm thickness. Cut shaping as you like.
Fill half a shape with 1/2 tsp of custard.
Cover with another shape and spread with beaten egg closing very well the edges.
Fry the sweet tortelli in boiling oil. Strain and put them on kitchen paper.
Then, while they are still warm, cover with caster sugar.
