Tomato Preserve with Thermomix: homemade Tomato Sauce 
Preserving tomatoes the italian way???? Yes! Let's do the homemade Tomato Sauce with Termomix, so you can preserve your Tomatos for the winter. On my side of the world, Summer is ending and it's time to prepare the tomato preserve for the winter! Here in Italy there is a real tradition for the preparation of tomato preserve, or tomato sauce.

IN smaller towns families usually gather for a few days, usually in a house in the countryside; they use enormous pots and they start cooking tomatoes. Then they put the sauce in the bottles, it's like a proper assembly line: one holds the bottle, one pours the sauce in it, one seals the bottle, one puts it away. Children always have a great time playing around, getting dirty and spending time with the extended family!

It's a wonderful job, but it is pretty hard too. You spend time with your loved ones and you work hard, but you also have great chats, talking about things you never have time to tell. Children have fun giving an helping hand or tasting the sauce and watching the adults working.

Unfortunately all of this cannot happen in our cities. So if you want your own tomato preserve for the winter, you may need your trusted friend Thermomix.

Ingredients


- 1 kg ripe tomatoes (the best ones are San Marzanoor Roma Tomatoes)
- 1 tsp salt


- 1 onion
- 2 or 3 big, fresh basil eaves (you may add your favourite herbs)
- 1 carrot
- 1 celery stick
- parsley to sprinkle
- 1 garlic clove

Let's cook

Wash 1000g of tomatoes.

Cut them in half, remove the stalk, any black spots and some seeds.

As you cut them, put them on a colander to drain. In this way they lose a little water.

Put the tomatoes in the mixing bowl together with your favorite smells and a teaspoon of salt and blend 1 Min. Turbo Speed.

Place the basket over the mixing bowl and cook for 30 Min. Varoma Temp. Speed 1.

As soon as the time is up, pour the tomato into perfectly clean and sterilized glass jars.

Close them tightly and sterilize in boiling water for at least 30 Min. Leave in the pot until the water has cooled.

Tips

You can wrap your bottles/jars in newspapers sheets. In this way you will prevent them from breaking up during the boiling.

My Sicilian aunt told me to wrap the bottles with a blanket after sterilization. In this way the warmth that sterilises will last longer.
