Thermomix Quinoa Salad

Are you looking for a fresh and nutritious dish? The Thermomix Quinoa Salad is ​​a good, tasty, complete and balanced single dish! The classic salad to take to the office or summer center :-)

Sometimes when I prepare dishes very rich in vegetables, the substance, the energy they give you is not really enough, unless you integrate them with proteins or anything else! Here is an excellent solution, because quinoa is a very special pseudo-cereal.

This dish has a little bit of everything you need in the right doses. If it intrigued you, it certainly means that you like quinoa or, at least, that you would like to prepare it.

Quinoa is a pseudo-cereal native to South America; it is gluten-free, has a high protein content and provides important nutrients such as minerals and vitamins (magnesium, vitamin C and vitamin E) :-)

Perfect for replacing pasta, it is excellent for preparing cold salads of all kinds, able to satiate you and recharge you in a healthy way!

I propose this quinoa salad recipe with Thermomix vegetables, delicious and tasty just enough to make you cook it several times ;-)


- 15 g basil + to taste to garnish
- 250 g cucumbers
- 100 g red spring onions
- 180 g yellow peppers
- 20 cherry tomato
- 200 g quinoa
- 400 g water
- salt to tast
- extra virgin olive oil to taste to season
- a lemon juice
- 200 g feta cheese

Let's cook

Put 15 g basil, 250 g large pieces of cucumbers, 100 g red onions in the mixing bowl and mix 3 Sec. Speed 4.

Transfer to a large salad bowl and keep aside.

Without rinsing the mixing bowl, put 180 g yellow peppers into large pieces and chop 3 Sec. Speed 5.

Combine with the rest of the vegetables and keep aside.

Cut 20 cherry tomatoes into quarters and add them to the rest in the salad bowl.

Rinse well 200 g quinoa in abundant cold water (otherwise it will be bitter ...).

Rinse the mixing bowl and pour the quinoa, 400 g water, a pinch of salt and cook 18 Min. 100C Reverse Speed Soft.

Once the quinoa has absorbed all the water, transfer it to a large plate, season it with a little extra virgin olive oil and let it cool for 20 Min. Turning it sometimes with a fork.

Season the vegetables with a drizzle of extra virgin olive oil, a pinch of salt, the juice of a lemon and mix well.

Add the quinoa, 200 g diced feta and mix well.

Let it rest for 30 Min. and serve.


To season the salad, you can replace the lemon with balsamic vinegar.

If you prefer coarsely chopped vegetables, you can cut everything by hand like cherry tomatoes.

Quinoa must absorb all the cooking water, such as couscous, so the quantities must be precise: the water must always be double the weight of the quinoa seeds!

Serve the quinoa with vegetables garnished with a few fresh basil leaves.
