Hawaiian Haupia Coconut Pudding Recipe with Thermomix

Ever been to Hawaii? I don't :-) But every time I taste Hawaiian Haupia, the Coconut Pudding without jelly with the Thermomix, it's as if I took a plane and landed among palm trees, flowers and found myself in the presence of an incredible and crystalline sea!

I also hear the ukulele in the background playing relaxing music!

I always like to listen to "Somewhere Over the Rainbow" in the version of Israel KaÊ»anoÊ»i Kamakawiwo’ole. And there is nothing I can do, while I prepare this dessert so fresh, able to conquer anyone, I hum it repeatedly. After a while my children laugh at me!" And they are not entirely wrong :-D .

Judy Garland's original, of course, is also a very beautiful song, but Israel's voice cradled by the ukulele is truly irresistible ...

All this to say that a teaspoon of this coconut "Coconut Pudding" evokes a universe of images and emotions, because it is very good and truly unique !! I sometimes dream of it :-)

An unusual, original and fresh dessert for the summer!! Ready to enjoy the Haupia Coconut Pudding without jelly? ;-)

Ingredients

(for 4 people)
- 150 g coconut flour
- 450 g water
- 100 g skimmed milk
- 60 g sugar
- A pinch of salt
- A vanilla bean
- 50 g corn starch
- Fresh coconut to taste



Let's cook

Put 150 g coconut flour, 450 g water in the mixing bowl and cook 12 Min. 100C Speed 2.

Then blend 30 Sec. Speed 8.

Strain through a strainer and press down with a spoon to get all the milk out.

Quickly rinse the mixing bowl to remove the residual coconut flour.

Pour all the coconut milk obtained in the mixing bowl, add 100 g skimmed milk, 60 g sugar, a pinch of salt, the seeds of a vanilla bean and cook 14 Min. 100C Speed 1.

Add 50 g cornstarch and blend 2 Min. Speed 4 until a creamy and shiny compound is obtained.

Pour immediately into a plumcake mold and leave to rest for 2 hours in the refrigerator.

Once it is firm, turn the haupia on a cutting board and cut it into cubes.

Sprinkle the cubes of Hawaiian Haupia Coconut Pudding with freshly grated coconut and serve.


Tips

You can use ready coconut milk! Use about 300 g.

Instead of the milk (which is not exactly orthodox) you can use, as the original recipe, water. This way your haupia will also be lactose free!
