Thermomix Coconut Gelato
The taste of Thermomix Coconut Gelato will take you straight to a tropical beach, with white sand and palms!

Do you dream of the Caribbean or the Maldives? I do, very often, especially when the heat of summer hits the city! While waiting for our dream to come true (maybe you've been luckier?) we can make ourselves a tub of nice coconut ice-cream, close our eyes...and dream! Your couch might turn into a chaise longue by the ocean!

To make this recipe I strongly recommend you buy some grated coconut from your local store, unless you feel like working your way through a fresh coconut!

Ingredients

100 g sugar
400 g coconut milk
50 g coconut flour
250 g fresh cream



Let's cook

Put 100 g sugar and 400 g coconut milk in the mixing bowl and cook 5 Min. 90C Speed 3.

Add 50 g coconut flour and cook 3 Min. 90C Speed 3.

Transfer the mixture into a low, wide container. Leave to cool.

Then refrigerate for at least 1 hour until it is very cold.

Put 250 g fresh cream, the mixture of milk and coconut flour into the mixing bowl and mix 2 Min. Speed 4.

Pour into a large bowl and put in the freezer at least 8 hours.

When the ice cream has hardened, cut it into squares, put it in the mixing bowl and blend 10 Sec. Speed 10, then 30 Sec. Speed 4.

Put the ice cream back in the freezer at least 1 hour and serve.



Tips

To enhance the exotic flavour add one or two mint leafs. If you like to decorate, shave some dark chocolate on top: coconut and chocolate together are just perfect!

You can replace the coconut flour with 100 g of freshly grated coconut.
