Thermomix Coconut Gelato
The taste of Thermomix Coconut Gelato will take you straight to a tropical beach, with white sand and palms!

Do you dream of the Caribbean or the Maldives? I do, very often, especially when the heat of summer hits the city! While waiting for our dream to come true (maybe you've been luckier?) we can make ourselves a tub of nice coconut ice-cream, close our eyes...and dream! Your couch might turn into a chaise longue by the ocean!

To make this recipe I strongly recommend you buy some grated coconut from your local store, unless you feel like working your way through a fresh coconut!

- 300 gr Full Cream Milk
- 250 gr Cream
- 50 gr Coconut, shaved or grated
- 2 tbsp Vanilla Sugar
- 80 gr Caster Sugar
- 30 gr Corn Starch
- 125 gr Coconut Yogurt
- 1 Egg White

Let's make our Coconut Gelato

Pour milk, cream, coconut, vanilla sugar, sugar and corn starch in the bowl. 7 Min. 90° Speed 4.

Pour the mixture in an metal container, let it cool down and place in the freezer.

Take the frozen mixture out and chop it.

Place pieces in the bowl 20 Sec. Speed 6.

Add yogurt and egg white 1 Min. Vel. 4.

Serve immediately.

My Advice

To enhance the exotic flavour add one or two mint leafs. If you like to decorate, shave some dark chocolate on top: coconut and chocolate together are just perfect!
