I came up with my very own Pumpkin Muffin recipe because lately my daughter has been asking more and more for pumpkin, and there is nothing I wouldn't do to keep this passion going!
We watched Cinderella a few nights ago, and since then everything has been about squash, mainly zucchini, pumpkin and zucchini flowers :-). She absolutely adores pumpkin-based dishes and I'm so happy about it that I have created enough recipes to make a whole cook-book out of them! Risotto, side dishes, desserts... everything prepared with her favourite squash!
This recipe is the latest outcome of my recent cooking experiments: I hope you like it as much as my daughter does. I sprinkled sugar and cinnamon on top, even though these are savoury muffins, and I reckon it's a perfect match. What do you think?

Ingredients- 200 gr Pumpkin, chopped roughly
- 500 gr Water
- 50 gr Unsalted Butter, cubed
- 100 gr Milk
- 250 gr Plain Flour
- 2 Eggs
- 1 tsp Salt
- 7 gr Baking Soda
to sprinkle on top
- 60 gr Sugar
- 70 gr Plain Flour
- 2 tsp Cinnamon
- Unsalted Butter to taste
Let's make our Pumpkin MuffinsPlace pumpkin in Varoma basket and fill up the bowl with water. 25 Min. Varoma Temperature Speed 1.
Empty water and place pumpkin in bowl. 2 Min. Speed 5.
Add butter, milk, flour and eggs. 1 Min. Speed 3.
Add salt and baking soda. 20 Sec. Speed 3.
Pour mixture in muffin tray.
In a mixing bowl, mix sugar, flour and cinnamon and sprinkle on muffins. Add a tiny bit of butter on each one.
Bake 20 Min. 175°.
My AdviceThe pumpkin can also be cooked in the oven.
