Pumpkin Muffins with Thermomix

I came up with my very own Pumpkin Muffin recipe because lately my daughter has been asking more and more for pumpkin, and there is nothing I wouldn't do to keep this passion going!

We watched Cinderella a few nights ago, and since then everything has been about squash, mainly zucchini, pumpkin and zucchini flowers :-). She absolutely adores pumpkin-based dishes and I'm so happy about it that I have created enough recipes to make a whole cook-book out of them! Risotto, side dishes, desserts... everything prepared with her favourite squash!

This recipe is the latest outcome of my recent cooking experiments: I hope you like it as much as my daughter does. I sprinkled sugar and cinnamon on top, even though these are savoury muffins, and I reckon it's a perfect match. What do you think?



Which seeds do you prefer to put on your pumpkin muffins?

Ingredients

- 200 g pumpkin
- ½ onion
- 40 g extra virgin olive oil
- 50 g unsalted butter
- 100 g whole milk
- 40 g grated Parmesan cheese
- 200 g plain flour
- An egg
- Salt to taste.
- ½ sachet of instant yeast for savory pies



Let's cook

Peel and cut the pumpkin into pieces to obtain 200 g. Put it aside.

Put ½ onion and 20 g of extra virgin olive oil into the mixing bowl and blend 3 Sec. Speed 10.

Stir 3 Min. 120C Speed 1.

Add the 200 g of pumpkin cut into pieces and cook 20 Min. Varoma Temp. Speed 1.

Whisk A few Sec. Speed 6.

Add 50 g unsalted butter, 100 g whole milk, 40 g grated Parmesan cheese, 200 g plain flour, 1 egg and salt to taste. 1 Min. Speed 4. Collect the parts that are on the sides towards the center.

Add ½ sachet of instant yeast for savory pies and mix 1 Min. Speed. 4.

Pour the mixture into 8 silicone muffin molds.

Bake for 20 Min. 180C.

Tips

You can replace the onion with leek.

You can decorate with dried fruit or with seeds to taste.
