Thermomix Pumpkin Soup

Pumpkin's in season! Why don't you try this Thermomix Pumpkin Soup ?

Oh my loved PUMPKIN...Boiled, baked, steamed or rosted, this fantastic squash is very versatile and can be cooked in so many different ways, I never have enough!
Children love it because of its colour, sweet taste and - of course - because it reminds them of Halloween.


Today I came up with a very simple Thermomix Pumpkin Soup, a classic, easy and quick meal that we all know and love.
Serve it hot or cold, with cream, cheese, croutons or all of the above and be sure to make the whole family happy. The procedure is quite standard, very similar to the Pumpkin and Carrot Soup.

Ingredients

- 800 g water
- 1 tbsp Thermomix vegetable stock cube
- 1 kg pumpkin
- 1 onion
- 40 g extra virgin olive oil
- fresh parsley to taste



Let's make our Pumpkin Soup

First, we need some clear stock: pour the water into the mixing bowl and add 1 tbsp Thermomix vegetable stock cube and cook 5 Min 100C Speed Soft. Put aside.

In the meantime, cut 1 kg pumpkin into big chunks and put aside.

Put 1 onion into the mixing bowl, place the measuring cup on and chop 2 Sec. Speed.7

Add 40 g extra virgin olive oil, place the measuring cup on and chop again 2 Sec. Speed.7 .

Cook 3 Min 100C Speed.1.

Add the pumpkin and the clear stock, place the simmering basket on the lid and cook 25 Min 100C Speed.1.

Then place the measuring cup on and mix 15 Sec. Speed 7.

If you want to adjust the texture, you can use the Varoma function. I generally do 20 Min. Temp. Varoma Speed 1.

Sprinkle with fresh parsley before serving.

My Advice

Pumpkin Soup goes well with many types of soft cheese and nuts. When I serve this soup, I like to make a platter with bread, brie, camembert, cashews and wall-nuts and put it at the table for some side nibbling.
