Calling all pumpkin lovers: this delicious Thermomix Pumpkin Risotto with Spicy Provolone matches our favourite squash with spicy Provolone cheese (available in most delis) to create the most amazing combination of flavours! A real treat, especially if you find Carnaroli rice, also known as "the King of rice" in Europe.
This is one of my "fancy family-meals": I like to cook it on Saturdays or Sundays for lunch, because the whole family loves it and on week-ends we can all enjoy our meals together with no pressure from work. So I set the table nicely, serve the risotto in my best dish and treat my favourite people to one of our favourite recipes. Isn't that what life is all about? And thanks to Thermomix I manage to cook like a chef and still be full of energy afterwards to play and plan activities for us all!

Ingredients- 45 gr Shallot
- 75 gr Extra Vergin Olive Oil
- 200 gr Carnaroli Rice
- 340 gr Pumpkin, cubed
- 340 gr Water
- 1 Tablespoon Thermomix Vegetable Stock Cube
- Spicy Provolone to taste
Let's make our Thermomix Pumpkin Risotto with Spicy ProvolonePut the shallot in the bowl. 2 Sec. Speed. 7.
Add the oil. 3 Min 100 ° Speed. 1.
Add the pumpkin. 5 Min. 100 ° Speed. 1.
Add the rice in the bowl and toast it: 3 Min. 100 ° Speed. Soft Anticlockwise.
Add the water and the stock cube. 15 Min. 100 ° Speed. Soft Anticlockwise.
Check that the rice is cooked. If not, give it a few more minutes.
Pour the risotto on a large dish and grate abundant Provolone. Remember to leave it for five minutes before serving.
My AdviceFor the kids, use Parmigiano instead of Provolone: they'll love it!
