Almond and Ricotta Cheese Cake with Thermomix



Do you like nut cakes? Then try the "mandorlata di ricotta", an Almond and Ricotta Cheese Cake where crunchiness and softness meet creating a mouthwatering flavoured dessert.

In this cake the strong almonds and amaretti flavours meet the ricotta cheese softness and freshness surrounded by a crunchy short pastry. Once again thanks to your Thermomix you will prepare a very elaborate dessert with a few simple steps.

Aching hands after chopping with a knife and mixers that block because "they can't do it"? With Thermomix this is just a bad memory and I can enjoy myself making some home-made confectioner's desserts while my daughters play and nibble some ingredient hither and yon.

A very close friend of mine loves nuts and dry fruits but he is cream intolerant, raw dairy products intolerant in general. That is why I prepared this cake for his birthday and he was over the moon! I am very happy he and the other guests liked it! :-)

So I must thank Tina Tomasi from Ragusa (Sicily) who has sent me this recipe. She wrote: "This is my sister-in-law's recipe...I adapted it for Thermomix and customised it by adding 1/2 small glass of brandy or amaretto liqueur to the filling".

Ingredients


- 500 g Ricotta Cheese
- 100 g Almonds
- 1 Amaretti Cookies Pack
- 300 g Flour
- 100 g Soften Butter
- 100-150 g Sugar
- 1 Egg
- 1 Pinch Salt
- 1 Baking Powder Sachet (15-16 g)
- 1 Vanillin Sachet (0,5 g) or 1 Tsp of Thermomix Vanilla Sugar
- Icing Sugar to taste


How to prepare the Almond and Ricotta Cheese Cake


Put 4 almonds aside.

Put the rest of them in the bowl and grind. 10 Sec. Speed 4. Put aside

Put amaretti cookies in the bowl and grind. 10 Sec. Speed 4. Put aside.

Mix ground almonds and amaretti with the ricotta cheese. Amalgamate. 50 Sec. Speed 5. Put aside.

Put flour, sugar, egg, butter, vanillin and baking powder in the bowl. 1 Min. Speed 5.

Crumble a half of this mixture in a buttered 24 cm diameter baking pan.

Pour the filling homogeneously.

Crumble the other half of the mixture on top.

Cut the four almonds you put aside into slices and put them on top.

Bake. 35 Min. 200°C.

When cold, dust with icing sugar.
