Pasta with Porcini - Thermomix Recipe



Would you like to prepare pasta with porcini in your Thermomix? A professional first dish made in a few simple steps.

Thanks to dried porcini mushrooms, you won't need to go looking for fresh porcini in a forest or specialised markets. You just have to soak them to find their unmistakable taste and flavour.

I've used this Samantha Desiderio's recipe to dress some homemade fettuccine I made myself (with Thermomix of course!) on Sunday. All the guests licked their chops! Even my daughters ate them because of my little trick (read about it in "My advice" section).

As only a few people know, Thermomix can also be used to cook spaghetti, such as in the Bacon and Peppers Pasta or in the Pasta with Asparagus.

Ingredients

- 50 g dried porcini mushrooms
- 50 g Parmesan cheese
- parsley to taste
- 1 garlic clove
- chilli pepper to taste
- 80 g extra virgin olive oil
- 500 g Spaghetti
- 950 g Water
- 1 tsp Thermomix Vegetable Stock or 1 Tsp Salt





How to prepare Pasta with Porcini

Soak 50 g dried Porcini Mushrooms.

Put 50 g Parmesan cheese in the mixing bowl and grind. 10 Sec. Speed 1 to 8.

Add parsley while the knives are moving and grind. 5 Sec. Speed 1 to 8.

Put this mixture aside.

Put 1 garlic clove and chilli pepper to taste in the mixing bowl and chop 5 Sec. Speed 8.

Add 80 g extra virgin olive oil and sauté 3 Min. 100C Reverse Soft Speed.

Squeeze mushrooms and put them inside the mixing bowl with a tsp stock 5 Min. Reverse 100C Soft Speed.

Add mushrooms soaking water, strained.

Let it boil 100C Speed 1until it boils.

Put spaghetti into the boiling water and cook for the suggested time 100°C Speed Gentle Stirring Reverse.

Serve in an oven dish and dress with parmesan cheese and parsley mixture you put aside before.


My advice

I always have a problem with small pieces of vegetables in the dish that not everyone likes. So I've mixed the sauce before dressing fettuccine. Even and especially my daughters said they were dainty!
