Almond Paste Recipe Thermomix

Almond paste recipe Thermomix is a basic preparation widely used in southern Italy pastry.
With this recipe you get about 650 g of almond paste. The perfect quantity for me because I prepared the Almond Granita (for which you need 350 g of almond paste) and the Biancomangiare Blancmanger (for which you need 300 g of almond paste)

You can also use it to make Martorana fruit. Do you know what it is? Colorful fruit-shaped sweets that are made of almond paste.

(for 650 g of almond paste)
- 300 g granulated sugar
- 300 g shelled and peeled almonds
- 30 g water
- 20 g glucose
- A tsp of vanilla extract(optional)
- A vial of almond flavor (optional)

Let's cook

Put 300 g granulated sugar in the mixing bowl and make it icing 30 Sec. Speed 10.

Add 300 g shelled and peeled almonds and chop 30 Sec. Speed 10, increasing the speed gradually.

Combine 30 g water, 20 g glucose, a tsp vanilla extract (optional), a vial of almond flavoring (optional) and amalgam 30 Sec. Speed 4.

Put the dough on the work surface and knead a few mins with your hands.

Form a loaf, wrap it in cling film and keep it in the refrigerator 30 Min. before using it.


Glucose is used to keep the almond paste soft. If you plan to consume it quickly, you can leave it out and add 10 g of water instead.
