Dark chocolate is involved in this recipe instead of cocoa powder. Together with butter, potato starch, flour and eggs, this yummy and antique raw material becomes a very soft dessert to offer to your guests in every kind of occasion.
Actually, there is a very low amount of flour and potato starch because the whole dessert is based on the fat components of chocolate, eggs and butter that create a blaze of savour! :-P
In fact as some chefs and many grandmothers say, you find in a dish what you put in it: if you put good things in it, it will be good, if you put free-fat ingredients or whatever, you won't necessarily obtain a good taste.
But, at the end of a very hard day or when you would like to seal a moment of happiness, you mustn't care of calories! ;-)

Ingredients
- 200 g Dark Chocolate
- 110 g Butter
- 4 Eggs
- 100 g Sugar
- 40 g Potato Starch
- 15 g Flour "00"
- 30 g Amaretto (or another sweet liqueur according to your taste)
- 1 Tbs Baking Powder
How to prepare the Chocolate Soufflé
Place the butterfly tool and add eggs and sugar. 3 Min. Speed 3. Put aside.
Remove the butterfly and melt chocolate and butter. 3 Min. 60°C Speed 3.
Add potato starch, flour, liqueur and then the mixture of eggs and sugar. 30 Sec. Speed 4.
Put this mixture in a baking pan and bake. 30 Min. 180°C.
Chiara's advice
I used a silicone pan but if you don't have it you may use a normal baking pan spread with butter and some grated amaretti biscuits.
If you want to sweeten your dessert I suggest to serve this soufflé with the Thermomix Custard flavoured with amaretto liqueur or whatever you've chosen.
The cake remains really soft so you may pay attention to the tooth-pick test!
